We are seeking the services of an experienced head chef who is fully trained and experienced in Vanuatu. Tamanu’s restaurant is open 7 days/week – 7:30 am to 9:30pm. You will manage and roster a kitchen brigade of 5 including 3 chefs. Tamanu’s a la carte restaurant is known as one of the best in Vanuatu. Your role will be to make it consistently ‘the best' without

exception. Duties and responsibilities:

1) Menu creation

2) Food preparation and direction to produce consistently exceptional food quality

3) Development, implementation & documentation of kitchen procedures

4) Training of kitchen personnel to ensure compliance, quality and consistency

5) Purchasing and ensuring reduced F&B costs

Stock control

6) Rostering of kitchen staff

7) Kitchen and culinary management of functions and events.

Criteria:

- Have in-depth experience of all aspects of kitchen management principals invloving planning, resource allocation and coordination, purchasing, production methods, and coordination and training of people;

Possess a passion for the role and be a procedurally driven professional ensuring the profitable operation of the business.
