Job Desctiption:
The Beach Vanuatu is seeking a suitably qualified and experienced candidate to join our team as Executive Chef. The successful candidate should have a minimum of 5 years' experience in a similar position within an international hotel, resort, or premium hospitality environment.
Key Roles & Responsibilities
- Demonstrate a proven track record of working in diverse culinary environments across different countries or regions.
- Possess strong verbal and written communication skills, with the ability to lead teams, collaborate effectively across departments, and liaise professionally with suppliers and guests.
- Hold relevant formal culinary qualifications, together with current certifications in food safety, hygiene, and management training.
- Oversee and manage all kitchen operations, including inventory control, stock management, food production, and staff supervision.
- Effectively manage food costs, pricing, purchasing, and portion control to maintain profitability while ensuring high-quality standards.
- Ensure all hygiene, sanitation, food safety, and workplace safety requirements are strictly followed in accordance with applicable local and international standards.
- Direct and monitor the entire food preparation and production process to ensure high standards of quality, consistency, efficiency, and presentation.
- Maintain consistent standards of food quality, flavour, presentation, portioning, and service across all dishes and outlets.
- Lead, mentor, coach, and develop culinary staff, particularly within high-volume and large-scale kitchen operations.
- Have recent hands-on experience managing or working within premium, multi-outlet dining facilities, luxury hotels, or high-end resort kitchens.
- Demonstrate strong knowledge of operating, maintaining, and troubleshooting commercial and high-end kitchen equipment.
- Work closely with Food & Beverage Management and other departments to develop menus, improve guest experiences, control costs, and maximise operational efficiency.
- Monitor kitchen performance and implement corrective actions where necessary to maintain the required standards.
- Promote creativity and innovation in menu development while responding to guest preferences, market trends, and locally available products.
- Ensure effective training and development programs are implemented for all culinary employees.
- Be willing and available to work flexible shifts, including weekends, public holidays, evenings, and after-hours, and to be on-call when operationally required.
- Perform any other reasonable duties assigned by Management in support of the smooth and efficient operation of The Beach Vanuatu.
Selection Criteria:
- Possession of a formal culinary qualification from a recognized culinary institution.
- Current certifications in food safety, hygiene, HACCP, and occupational health and safety.
- Demonstrated experience working in international hotels, resorts, or culturally diverse culinary environments.
- Recent experience managing kitchens within luxury hotels, resorts, multi-outlet restaurants, or fine dining establishments.
- Proven ability to lead, mentor, supervise, and develop a large kitchen brigade.
- Experience in staff scheduling, performance management, training, and employee development.
- Strong understanding of kitchen budgeting, food cost control, stock management, purchasing, and supplier negotiations.
- Proven ability to manage pricing and operational costs while maintaining profitability without compromising quality.
- Skilled in developing innovative menus that reflect current culinary trends, seasonal products, and guest preferences.
- Ability to maintain consistency in taste, presentation, food quality, and portion control across all menu items and outlets.
- Thorough knowledge of food safety legislation, HACCP principles, hygiene requirements, and health and safety regulations.
- Proven experience in maintaining a clean, safe, organised, and hygienic kitchen environment.
- Excellent verbal, written, and interpersonal communication skills.
- Ability to collaborate effectively with Food & Beverage, Events, Purchasing, Finance, and other departments.
- Ability to interact professionally with guests and respond effectively to guest requests, feedback, and special requirements.
- Proficient in the operation, maintenance, and troubleshooting of commercial and high-end kitchen equipment.
- Ability to adapt effectively to changing operational demands, special events, high-occupancy periods, and last-minute changes.
- Passion for culinary innovation, sustainability, waste reduction, and introducing new techniques and efficiencies into kitchen operations.
